Dish of the week: Reshmi murg kebab

Because chicken doesn’t have to be boring.

A lot of people find chicken tasteless. It doesn’t have to be.

We brought in chef Asif Khan, head of the kitchen at the relaunched Indian fine-dining restaurant Mahec, at the Le Meridian Village in Garhoud, to show you one way to go about debunking that “chicken is boring” myth. 

What you will need

  • Chicken
  • Ginger paste
  • Garlic paste
  • Cream cheese
  • Processed cheddar
  • Egg
  • Cumin
  • White pepper powder
  • Corn Oil
  • Cashew Nut paste
  • Fried onion paste
  • Chopped coriander leaves
  • Garam masala powder
  • Lemon juice
  • Butter for basting
  • Salt to taste

How to go about making it

For the first marinade: Cut the chicken into little cubes, add ginger, garlic paste in to the chicken pieces and set aside for about 20 minutes.

For the second marinade: Add all the other ingredients in a bowl and mix well.

Apply the second dressing to the chicken and set it aside for at least two hours. In the meantime, pre heat the oven to 200 degree Celsius.

When ready, thread the marinated chicken pieces onto skewers and cook in the preheated oven (unless you have a tandoor grill at home) for ten minutes basting with melted butter. Turn over, baste with melted butter again and cook the other side for ten minutes.
