What dish reminds you of your childhood?
My mother’s lamb with baby turnips. I have tried to duplicate it but I just can’t.

What’s the most romantic restaurant you’ve ever been to?
One If By Land, Two If By Sea in New York City. 

What’s your favourite dish at Junoon Dubai?
It’s difficult to just pick one, but if I absolutely had to, it would be the eggplant chaat. 

Is there a food you have never liked?
Nothing. Growing up, we were taught to respect food. 

What country do you think has the best food?
India, because of the diversity and different styles of regional cuisines. 

What was the last restaurant you went to that blew you away?
Blue Hill at Stone Barns in upstate New York. 

What annoys you when you go to a restaurant?
Inattentive service. 

What essential qualities do you believe make a great restaurant?
Consistency of food and service and constant innovation.
