What’s in your fridge? Chef Schilo van Coevorden opens up

Executive chef and founder of award-winning restaurant Taiko, Schilo van Coevorden is in charge of its first international outpost at Sofitel Dubai The Obelisk  

The Dutchman lives in Amsterdam but is currently in Dubai for five weeks overseeing the Taiko Dubai opening.

Do you keep your fridge neat and tidy or are there some things lurking in the back…?

At home in Amsterdam, I am the one who has been charged with organising the fridge, However, my family tends to make a mess of it after, which then leads to me re-organising it. I am a big believer in keeping my fridge tidy. In fact, I’d say I treat my fridge with the same discipline as my restaurants.

What’s the weirdest thing in your fridge right now?

Food for my fish. I have a mini blowfish, similar to the Japanese Fugu. I also have seven types of mustard.

What’s the guilty pleasure you always have in your fridge?

Caviar. You never know who might come to dinner.

What type of milk do you have in your fridge?

I make an amazing fresh pistachio milk and also a home-made hazelnut milk.

Is there an item you must have in your fridge 365 days a year?

Absolutely: a special smoked beef sausage from Amsterdam.

What drinks are in your fridge?

I absolutely love soft drinks, you could say I am somewhat of a soft drink fanatic. So you will likely find cans or bottles that I have imported or bought from all over the world. Some of them have been there for years as they were very difficult to find, I like the look of them and therefore can’t bring myself to drink them. From Japanese ice teas and limited-edition Dr Pepper to Fever Tree sodas, there really is a whole range in my fridge.

Soft drinks are a must

Do you like to have a well-stocked store cupboard?

Oh yes, I probably have more items in my store cupboards than in all my restaurants combined.

Shopping in the supermarket - do you make a careful list or do you just wing it?

I never make a list as I like to keep my cooking seasonal. Based on what is available, I make the meal in my mind as I shop.

What’s your go-to meal when you arrive home exhausted after work?

Egg fried rice with peanut sauce and prawn crackers is my ultimate late-night meal.
