Top tips for barbecue season by chef Ben O’Donoghue

Become the pit master.

If there’s one thing that Aussie chef and TV personality Ben O’Donoghue knows about, its barbecue. He could literally write a book on it. In fact, he actually did. It’s called Ben’s BBQ Bible and it’s essential reading for all those looking to wow their guests with grilled meats and vegetables this winter.

As Ben put together a special menu at the excellent Seafire Steakhouse at The Atlantis, we were able to grill the man himself to find out his top tips to a successful barbie.

Fuel up

Make sure you have enough fuel. So whether it’s gas, wood or charcoal be sure to stock up. There’s nothing worse than running out mid barbecue.

Pick a simple theme

I always like to pick a theme and run with it – from proteins to sides dishes.

You might want to do a Thai-themed BBQ with gai yang BBQ chicken or BBQ fish with chilli jam. Then a few simple salads to accompany the mains.

Or do a low and slow theme with brisket and/or ribs with simple sides. Just don’t make it too difficult. Barbecue’s should be relaxing and an opportunity to show off your skills.

Prepare yourself

Preparation, preparation, and more preparation is the key to success. Make sure you do as much as you can in advance so you can spend your time relaxing with your friends.

Let someone else handle the dessert

Delegate dessert to one of your invited friends.

Cool the beverages

Make sure you have all of your beverages on ice well before guests arrive.
